Does anyone know of some good recipes that DO NOT INVOLVE FRYING for plantains? I've looked it up but most insist on frying in alot of oil and things like that. Right now the plantains are in the yellow/green stage with maybe a tiny bit of black spots but of course I can wait longer until they become super ripe and sweeter so I am open to any plantain recipe.
Also, I got some amaranth flour on super sale but I have no idea what to do with it or how to use it. I know it is gluten free and only about half of the flour called for in a recipe should be substituted by amaranth but I was just seeing if anyone had any personal experiences with it.
