My computer and camera are acting up, but for now here is the
1 c. + 2 T packed brown sugar
1/2 c. sugar
1/3 c. Smart Balance (best if at room temperature)
1/4 c. applesauce
1 T maple syrup (or pancake syrup, or liquid sweetener of your choice)
1 tsp vanilla
2 1/4 c. flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. cinnamon
1 c. oats
1/2 c. or more dried cranberries
Preheat oven to 325 F.
In large bowl, mix sugars and margarine, then beat in syrup, vanilla, and applesauce until creamy. Add the dry ingredients (up through cinnamon). Stir in the oats and cranberries and anything else you'd like, until completely mixed.
Drop by tablespoons onto an ungreased cookie sheet. Bake 20-22 minutes.
Notes: You can mix the dry ingredients separately in another bowl before adding to the wet, if you'd like; I just usually skip that step.
You can add other things than cranberries - raisins, obviously, but I think that pecans or walnuts would also go nicely in this recipe, if you so desire.
