Chocolate Orange Cookies

so yesterday I experimented with some cookies and they came out, frankly, freakin amazing.
I only made a half batch so this is a recipe for a full batch so it might be a little different, but I luffed* them together anyway so nothing is really 100% accurate.

dry: 2 1/4 cups flour (we used whole wheat, but I'm sure they would work with regular flour as well)
3/4 teaspoon salt
1/4 cup cocoa powder
1/4 teaspoon cinnamon

wet: 1 cup shortening (you could probably use margarine, I haven't tried so I don't know)
1 1/2 cup brown sugar (we use demerara sugar, but you could probably just use any brown sugar)
1 underripe banana, mashed with a dash of baking soda (I know for baking people usually prefer to use super ripe black bananas, but if its too sweet, the banana flavor will interfere with the other flavors and I think it might taste a little weird. I used a banana that was yellow with just a few spots and it worked perfectly.)
1 teaspoon instant coffee granules (its not a "wet" ingredient but I mixed it with the wet so it could dissolve)
1 tablespoon vanilla
2 tablespoons of orange zest (maybe 1.5 or 2 oranges? I used about a tablespoon for a small batch I made, so this is just a guess. My cookies were very orangey, so you might want to use less, depending on your taste preference)

Preheat oven to 375. In a big bowl, mix dry ingredients. In a small bowl, mix the wet ingredients and then pour them over the dry and mix until it forms a ball.
Form the dough into balls (I'd say golf or ping pong sized is best) and then smoosh the balls flat onto the baking sheet.

Bake for 15-20 minutes, or until crispy on the outside and somewhat soft in the middle. Let cool. Nom until a) cookies are finished b)you're in a sugar coma and twitching on the floor or c) (for those of you with willpower) consume only enough till satisfied and then walk away...you quitter.

suggestions: try making them flat and making a sandwich cookie with marmalade perhaps? I haven't tried it but its just a thought.

*my manz says it means to "love something together' as in no measurements, just instinct and love.

I hope you enjoy them, and I might be making a bigger batch later, so I'll try and take a picture. If you DO make them, let me know what you think, suggestions, etc.


added subject line, also changed the amount of cocoa powder from 2 tablespoons to 1/4 cup because I just remade the cookies and actually measured. Also, pictures.
