Savory zucchini pancakes/squash fritters?

This is my old recipe. I'd like to veganize them or find a similar savory recipe that is already vegan. 

3 eggs
1/4 cup ww flour
1/4 cup corn meal
1/2 tsp salt
1 tsp cumin
1/4 tsp ground chipotle pepper (optional)
1-5 garlic cloves (to taste)
ground black or white pepper to taste
a few sprigs of chopped cilantro
1/2 cup fresh or frozen corn kernels
1/2  medium red onion, diced
4 cups coarsely grated zucchini
Whisk eggs then add flour and cornmeal, salt and seasonings. Once they are well combined add cilantro, corn, onion and zucchini, and stir well. Drop into a hot, lightly oiled skillet by generous heaping tablespoons, cook for a few minutes, then flip to brown on the other side. 

My zukes are almost big enough to harvest, so I want to make something like this this week. I'm looking for something hearty enough to use as an entree.
