I made burritos!
1 1/2 cups unbleached flour (i used whole wheat)
1 tsp baking powder
1 tsp salt
2-3 tbs shortening (i used vanaspati which is purified hydrogenated vegetable oil, or ghee...mmm fattening!!)
about a cup of warm water
Mix dry ingredients and then add in the shortening mixing like pastry with a fork, mix in your water a little at a time to get a sticky ball of dough. Let the dough "rest" for about 10 mins after you have kneaded it
Heat a nonstick pan on medium-low heat and make small dough balls about the size of a golf ball. Roll out the dough so it's thin, like a tortilla (duh) Cook the tortilla on both sides until you get dark spots on it.
1 can white beans
1 can red beans
1/2 red onion chopped
Salt, cumin, and red chili powder to taste
Cook the beans in their own liquid on medium-high heat until they are super soft, adding in salt and spices to taste. In a nonstick skillet fry your onions with more cumin until they are golden; add in the beans and mash them with a potato masher until they are of "refried bean" consistency.
5 roma tomatoes finely chopped
1/2-1 onion (this depends on your taste) finely chopped
1 chili, or 1/2 jalapeño (depending on taste)
1/4-1/2 green pepper (the green pepper i got was HUGE! so i used 1/4) finely chopped
about 2 tsp red chili powder (to taste)
about 1 1/2 tsp salt (again this is to taste)
3 tbs orange juice
3 tsp crushed garlic
cilantro (to taste)
chop all your veggies really really finely, if you have a salsa maker now would be the time to use it...put everything in a dish stir and let it "marinate" for at least an hour in the fridge
Once that's done and you are starving...take a tortilla add some cheeze, onions, beans and salsa and chow down!!
