Seitan Bratwurst

Adapted from this recipe.
  • 1 1/4 c. vital wheat gluten
  • 1/4 c. nutritional yeast
  • 1/2 tsp. each Old Bay seasoning, ground sage, and dried marjoram
  • 1 c. cold vegetable broth
  • 1/2 c. silken tofu
  • 1 tbsp. olive oil (I think I will try leaving this out next time)
  • 1 tbsp. soy sauce
Mix together dry ingredients in a large bowl. Mash up tofu and mix with the rest of the wet ingredients, then add to the dry ingredients. Divide into 5 portions; wrap each tightly in aluminum foil and steam for 40 minutes.
