1/2 small onion, minced
2 large cloves garlic, pressed/crushed
1/2 - 2/3 cup red bell pepper, minced
1/2 - 2/3 cup fresh corn kernels
minced jalapeno pepper (optional, if you like it hot!)
1/2 cup vital wheat gluten
1/2 cup whole wheat bread crumbs
1 tablespoon tomato paste
1/4 cup water
1 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon cumin
black pepper to taste
dash lime juice
small handful cilantro, finely minced
Saute the onion, garlic, corn, red pepper and jalapeno (if using) in a little olive oil, with a pinch of salt.
Partially mash the black beans. Combine all other ingredients in the bowl and stir. Add in saute mixture.
Knead until well combined, about a minute or two.
Form six patties
Fry in a little olive oil until well-browned on both sides, pressing with spatula.
(These would be good served on a whole-grain bun or in a wrap, with lettuce, tomato, salsa, soy cheese, whatever makes your little heart happy.)
