Tambli (Pumpkin Leaf Salad/Dip)

After some searching I was able to find a recipe to use the pumpkin leaves in a non-boring way!  I made them into Tambli which is an Indian Dish served cold.
1 c pumpkin leaves
1 tsp Cumin Seeds
1/2 tsp Mustard Seeds
1-2 Red Chilies
1 tsp oil
2-3 Green Chilies
2-3 tbs  Yoghurt (the vegan yoghurt of your choice)  (more if you want)
Salt Pepper to taste
Optional: Tomatoes and Onions
 
I had steamed my pumpkin leaves and then after discovering they were still furry I fried them with a little garlic and oil.  Once they were very well done, but not burnt.  I removed them from the heat and mashed them up really well...(the recipe says grind, but i don't have a grinder/morter/pestle) So i kept mashing them with the wooden spoon.  Set aside when mashed to your liking (think spinach in spinach dip type texture.)  Add 2-3 tbs yoghurt (more if you want) and stir.  Fry cumin seeds, mustard seeds and red chilies for a few mins (don't burn these!!)  then mix them into the yoghurt mixture.  I set this in the fridge for a bit to help the flavors.  I also added some chopped tomatoes and a little bit of chopped onion just for fun. 
This reminded me of spinach dip...kinda...tasted pretty good with chips!  I would make this for potluck...
