I lived on this recipe when I was vegetarian...but I didn't make it much when I went vegan, as I don't really like vegan cheeses. It got to the point where I was craving this so much that I went and got a brick of Vegan Gourmet cheddar and it actually tasted delicious! The original vegetarian recipe was found at Shades of Jaime.
** Makes 2 quesadillas **
4 tortillas (I use Eziekial 4:9 organic brand)
1 small sweet potato
1 can black beans, rinsed
1/2 cup vegan cheese
1 tbsp vegan margarine
Non-dairy milk (for potato mashing)
Chili powder & cilantro to taste
Fat free cooking spray
Salsa, for dipping (optional)
1. Peel sweet potato and chop into small pieces. Boil for approximately 10 minutes, or until very soft. Mash with margarine and milk as needed to make a smooth texture.
2. Cover one tortilla with 1/2 mashed potato, beans, cheese, salt, chili powder and cilantro. Cover with second tortilla. Do the same for the second set of tortillas.
3. Spray fat free cooking spray onto a frying pan and fry tortillas on each side, until cheese is melted.**
4. Serve with salsa, if desired.
**Alternatively, I have found it much easier to use a George Foreman grill or other type of sandwich grill, as it browns both sides of the tortilla simultaneously, and it cuts down on the difficulty involved in trying to flip the tortilla in the pan.
