My other criteria? My father is diabetic and I'm vegan, so I would like to make something that we'll both be able to eat. :) I'd also like it to easily last a bus ride and not melt or get too smooshed. :)

Also, I have heard that agave nectar is a good sugar substitute for both diabetics and of course vegans. Is this true? If so, a recipe invoving agave would be fabulous. :)
