billions of peaches...

This spring I moved into a home with a small orchard.  I now have a GIANT peach tree, covered in amazing peaches.

I am in the process of learning to can and so far have made some basic canned peaches. I am planning on starting some peach preserves tonight. Does anyone have some suggestions beyond canning the fruit, making preserves or making pie/ cobbler filling?

Has anyone canned peach products and experimented with things like using fruit juice in lieu of sugar in their preserves? I was thinking pineapple juice might be fun? The 'store' version of jam I usually buy lists pear juice as its sweetener.

There does not seem to be a whole lot of variety in the various recipes I have seen, but I want to make sure I do a good job and end up with something I won't mind feeding my family all winter long.
