Simple Treats: Question on flour substitution.

I'm in a baking mood (it's something about autumn) and I've dug out my copy of 'Simple Treats'.

As I'm no longer cooking for a coeliac I want to use wheat flour in place of the barley flour/rolled oats/etc in the book. Can I make a straight 1:1 substitution based on weight or will having gluten in my flour complicate things?

Any tips or suggestions of what to cook first are most welcome!

Note: I had a look through the memories/tags and couldn't see what I was looking for but my advanced apologies if I've missed anything.
