In my omni days, I was very much a lover of hamburger helper, and though you could leave out the beef for the recipe, there was still that pesky maltodextrin in the sauce mix? Well, I wanted to make something that sort of resembled it, or at least gave me the same 'comfort food in bulk' feeling :P so I tried my hand at this, turned out delicious.
Prep Time: 10 Minutes (Boil Time)
Cook Time: 10 Minutes (May Vary, Test Your Noodles!)
Yields About 4 Servings
2 1/2 Cups of Water
1 Package 'Meatless Meatballs'*
1- 12oz Bag of Egg Free 'Wide Ribbon Noodles'
1 Cube Vegetable Bullion*
*Notes: Items marked with an asterisk may need to be purchased at a
health food store, or specialty shop.
Total of 5 Parts,
3 Parts Oregano
2 Parts Salt and Pepper Blend
1 Garlic Powder
a sprig of Parsley
& a Splash of Extra Virgin Olive Oil
Step (1) Bring water, olive oil, and oregano to a rolling boil [Hi Heat]. (2) Carefully places noodles into boiling water, turn down heat slightly, maintain rolling boil. (3) Allow to cook for 2 minutes, then add meat-less balls**. (4) Allow to cook for 5-8 minutes. (5) Let water out from pot do NOT strain. (6) Add salt, pepper, and bullion cube. (7) Stir over heat, serve, garnish with parsley, and enjoy.
**The meat-less balls, WILL fall apart with most brands, that's actually the point, they have the best flavor and smoothest texture, and aren't chewy like faux ground mixes. They should break up during stirring and shortly after being in the water, so don't worry if you see this happen.
