Creamy Caesar Dressing

1/3 cup raw, unsalted macadamia nuts
3 tsp garlic powder
2 tbs nutritional yeast
3 tbs Dijon mustard
1 tbs lemon juice
1 tbs balsamic vinegar
3 tbs olive oil
small glass of water on hand

In a food processor, pulse the macadamia nuts until they resemble crumbs. Add other ingredients except water and pulse until combined. Run processor while you slowly add in water until the mixture is the desired consistency (probably about 3 tbs - 1/4 cup water). Scrape down the sides and pulse again to make sure the dressing is smooth. Season to taste with a little salt and pepper. Tastes great straight away, or chill first for a stronger flavor.

I started out with this ppk recipe for Caesar dressing, but it wasn't as creamy as I wanted and I thought it was too lemony, so I altered it to the above.
