1/2 cup each of: chick peas (canned or cooked and cooled), red kidney beans, white beans
1-2 avocados diced
1 large very ripe tomato, diced
2-3 button mushrooms, diced
1/3 red onion diced very finely
1/3 cup (8-10) kalamata olives (seeds removed)
1 large clove garlic, finely diced
1 handful of pepitas, raw
pepper, black, freshly milled is best
olive oil, extra virgin
vinegar: I used rice vinegar, the type you would use to make sushi rice with
Combine all ingredients in a bowl and gently combine, add the pepper, vinegar and olive oil to your own taste.
I would love to post you a pic but my camera gives crap photos, so i won't inflict that on you, plus it tastes vastly superior to how it looks.
I served mine with a side of roasted potato, sweet potato and pumpkin. O..... M..... G....
