And she requested my vegan chocolate cake.
not my cake, but a visual aid usually piques my interest in a recipe.
It's not actually mine, if you google "absurdly easy vegan chocolate cake" you'll find it.
Originally a Grange recipe from the depression era when milk and eggs were in short supply.
Very simple, very good.
* 3 cups flour
* 2 cups sugar
* 6 tablespoons cocoa
* 2 teaspoons baking soda
* 1 teaspoon salt
* 3/4 cup vegetable oil
* 2 tablespoon vinegar
* 2 teaspoon vanilla
* 2 cup cold water
Directions
Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake in two greased, floured pans at 350 degrees for 30 minutes.
Makes two layers of a two-layer 9-inch or 8-inch round cake, or medium small sheet cake. When cool, frost it.
I usually spread raspberry jam in between the layers.
