my husband eats meat. that's just the way it is. if i dont make a specifically vegan meal it's usually something like a vegetable, a starch, meat for him and then im left in the lurch. im not going to make another meal for myself. is there any other easy separate protein thing i could make (besides marinaded tofu or something like that). i love beans, but i usually make them as a bean and rice meal - red beans and rice, hoppin' john, lentil and rice casserole, etc.
is there a "stand alone" easy bean recipe so im not having extra potatos at dinner?
