Hey all. So I thought it might be fun to try to veganise this alton brown coq au vin recipe (found here: http://www.foodnetwork.com/recipes/alton-brown/coq-au-vin-recipe/index.html ) and i need a replacement for the chicken and the salt pork. For chicken, it needs to be something that will stand up to being marinaded overnight and baked for two hours. Previously I would have used quorn naked culets, but alas, not vegan. What would you suggest? Is there a similar product that is vegan? I thought seitan may work but it also might get gummy.
For the salt pork, i think some combination of liquid smoke + salt + mabye bacos would work.
