Speaking of vegan baking, I tried baking two different recipes (the basic vanilla with the lemon variation & the chocolate mint) from Vegan Cupcakes Take over the World and both times the cupcakes sank in the middle and the chocolate batter was too thin and didn't bake well. I've read the trouble-shooting in the book and I'm guessing it's oven temperature or an oil problem. Has this happened to anyone else? Any fool-proof way to avoid it next time?
