Soy-free whipped "cream"

This looks pretty involved, but interesting.

COCONUT CREME ANGLAISE
1 cup raw cashews, soaked 1-2 hours
1/2 cup young coconut meat
1/2 cup agave syrup
1 1/2 cups water
1 tablespoon vanilla extract
1/2 cup coconut oil

Blend all ingredients in a food processor until very smooth. Refrigerate until ready to serve.



As I'm allergic to cashews, I won't be making this version, but it looks good.

VANILLA CREME
2 cups young coconut meat
1/4 cup agave syrup
1/2 vanilla bean, scraped
2 tablespoons lime juice
2 tablespoons coconut oil
1/4 teaspoon sea salt

Blend ingredients in a food processor until completely smooth. Chill for 4-6 hours until firm.



This one looks delicious! I'm not allergic to soy, but I sometimes feel a little over-soyed. Don't you?
