creamy mushroom-potato soup

A warm wintery soup!
My whole family enjoyed this tasty creation!


Mushroom potato soup

2 tbsp olive oil
2 cloves garlic, minced
1 onion, diced
6-8 small potatos
10 baby bella mushrooms, diced
2 large shitake mushrooms, diced
*note about shrooms: you could use any combination, my shitakes were dried, so I soaked them to rehydrate them before adding
altogether it was about 1 1/2 cups mushrooms
4 cups soymilk
1/4 cup nutritional yeast
2 tbsp braggs

-heat oil in soup pot, saute garlic and onions for 3 mins
-add potatoes, saute 5 mins
-add mushrooms, saute 3 mins
-add soymilk, bring to a boil, reduce heat, cover and simmer for 30-45 mins
-add nutritional yeast and braggs
-put soup in blender or food processor and blend to desired consistency
-serve and enjoy!
