Muffins & Mac 'n' Cheez oh MY!

It's too cold to go outside, so I've been spending some time in the warm kitchen.

First, I want to give mad props to Vegan Yum Yum's delicious Mac 'n' Cheez recipe! It's definitely yummy and comfort-foody.



Also, I tried out two new muffin recipes that are very winter breakfast worthy! Hooray!





BANANA-WALNUT MUFFINS
Makes 12 regular muffins

1 1/3 cups flour (I like using half wheat, half white)
1/2 cup unrefined sugar (regular sugar would work too)
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3/4 cup oat bran (or you can use plain instant dry oatmeal)
1/2 cup chopped walnuts
2 ripe-ripe mashed bananas
1/3 cup olive oil
1 teaspoon vanilla extract
2/3 cup almond milk (or soy or rice)

Preheat oven to 375°F. Mix dry ingredients together. In a large bowl, mix wet ingredients together, separate from the dry ingredients. Gradually mix the dry ingredients into the wet ingredients. Place mixture into greased muffin tin, filling cups to the top. Bake for 20 minutes. Enjoy!




CARROT APPLE MUFFINS
Makes 8 big muffins

1 1/4 cups flour (I used whole wheat pastry)
1/4 cup unrefined sugar
1 tsp cinnamon
1 tsp real vanilla extract
1 1/2 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup grated carrots (about 2 carrots)
1/2 cup unsweetened applesauce
1 ripe mashed banana
1/4 cup almond milk
1/4 cup olive oil

Preheat oven to 375°F. Mix dry ingredients together. In a large bowl, mix wet ingredients together, separate from the dry ingredients. Gradually mix the dry ingredients into the wet ingredients. Place mixture into greased muffin tin, filling cups to the top. Bake for 15-20 minutes.
