I'm going to be baking some (vegan!) zucchini muffins, and the recipe asks for 3 cups grated fresh zucchini. I'm not a very frequent zucchini baker, so I'm not sure if I'm supposed to leave the skins on or if I should peel the zucchini first, and then grate them. I kind of want to leave the skins on for some colour/nutritional value, but I'm afraid they'll make the texture of the muffins weird.
