This was a What Do I Have In My Kitchen day. This was my first experimentation with squash, and I have to say, I'm very pleased.
I cooked the quinoa and chopped the veggies. Then roasted the veggies very quickly in the oven before sauteing them in some olive oil with some mustard seed and cumin. I desperately wanted curry, but I'm out.
It was totally easy and only took about 30 minutes from start to finish. A very nutritious and complete meal!
