Vegan Caviar?

Have any of you tried this vegan caviar? I've been vegetarian since childhood, so I have no point of reference as far as real caviar goes, but am really curious about it and prone to novelty food whims...

As you can see in the photo, it comes in three varieties. Any clue what the difference between them may be?

Should I end up ordering it on this whim, do I simply serve it on crackers? Does it go well with wine? I'm ridiculously without a clue, here.
