Vegan Dinner Party

A couple of weeks ago my housemates and I hosted a dinner party for our friends - I opted, as the vegan in the house, to cook all the food and show everyone how great vegan food is!
I decided to make entrées, main with side dishes and then dessert. The menu ended up as:

Olive Studded Foccacia served w/ Olive Tapendade, Beetroot Tapenade and Dukkah;
Apricot and Sweet Potato Tagine w/ Couscous, Persian Eggplant, Chilled Asparagus w/ Dilled Mustard Sauce and Caesar Salad;
and a No-Bake Chocolate Cashew Cake.

Everything turned out so, so well and everyone (including me!) was suitably impressed. We had just the right amount of food, great entertainment (the benefits of having an Elvis impersonator as a housemate) and lots of fun.

My beautiful new tagine, and couscous. Unfortunately I don't have a picture of the finished tagine meal, so you have to trust me when I say it was delicious.

Persian Eggplant - this was really really yummy and spicy, something really different and enjoyable.

Chilled Asparagus with Dilled Mustard Sauce - the sauce was SO good. I'm going to make it again and just keep extra in the fridge for, well, everything. YUM.

Caesar Salad - this was really good and the sauce was really satisfying.

No-Bake Chocolate Cashew Cake - the best thing about this is that the bottom is couscous and the top is tofu. It was so amazing, everyone ravaged it.

Overall it was so satisfying making this great food and having everyone, whether vegetarian, vegan or omni, enjoy their meal and have a fun night. Definitely worth all the effort!
If anyone wants any recipes, then just let me know! They are all sourced from various cookbooks and websites, but I have them handy.
