Our goal was to make a bunch of vegan sugar cookie cut-outs for an event this weekend, and for them to appeal to vegans and omnis alike without having to make a big deal about them being vegan. Conveniently vegan, you know?
I've gone through the memories and tried some of the variations mentioned there for roll-out cookies. Here's one that I've gotten decent (but not perfect) results from:
- 1/2 cup vegetable oil
- 1/4 cup Earth Balance margarine
- 1 tsp baking powder
- 2 1/2 cups all purpose flour
- 1/4 cup unsweetened applesauce .
- 3-4 tsps vanilla extract
- 3/4 cup white sugar
This comes out with a good look and texture, but it has a sickly-sweet aftertaste, as if it had a fake sugar in it or something. My husband (very omni) said they were kinda buttery, but tasted like butter-flavor rather than real butter. Well, yeah, that is the case. Not sure there is anything that can be done about it.
Any suggestions? Any sugar cookie recipes you like to use to surprise your omni friends? Just wondering is there is something I could do to improve on this.
