I've been a lacto-ovo vegetarian for more than three ears, and I'm working toward a vegan diet once again. This would be the fourth attempt I've ever made, and while the others have failed, I have more confidence this time around because I've recently become much more comfortable in the kitchen (as I believe cooking skill is really essential for a healthy vegan). Also, my girlfriend has talked about doing this with me, and since we live together and share nearly all of our meals, that is sure to be a good push in the right direction. However, we have one problem.
We both eat a good amount of chicken eggs. This is because our finances are EXTREMELY tight right now, and eggs are inexpensive, versatile and provide good nutrition when you're on a $20/week grocery budget! Eggs are a part of our breakfast almost daily, and my well of recipes is pretty small. I guess what I'm asking is this: [b]Do you have any good and CHEAP vegan breakfast recipes to share? What food items in general are good for breakfast and can provide the protein of eggs?[/b] Breakfast is an essential part of our routine, and while I am willing to give up some of my "traditional" breakfast foods, I don't want to end up just eating the same sort of things for breakfast as I do for lunch, or having the same breakfast every day of the week.
