So I made a big ol' roast dinner, with blackberry crumble afterwards.
The dinner was aduki bean stuffing, roast potatoes, roast parsnips and onion, carrots, sprouts and onion gravy. I know when you're vegan/vegetarian there is sometimes a desire to replace the meat in your roast dinner but I don't always see the point! Sometimes I'll make something as a centrepiece, but usually the trimmings are the excitement in a roast for me, so I add a can of slightly mashed beans to some stuffing mix and there's my protein sorted for the meal.
And then for pudding we had blackberry crumble, made with blackberries we picked in autumn and stuck in the freezer, woo!
