Pasta Salad, Avocado Sandwiches, Vanilla Fruit Salad, and Flat Muffins

As I posted earlier asking for good cold food ideas I thought it only right to share the recipes (all of which my 5 growing male friends praised non-stop)

I have never cooked much so these are fairly easy recipes and none take much skill. Much thanks to the ideas I read on here (esp the avocado sandwiches!)

Pasta Salad
4 c. dry macaroni
3 stalks celery, sliced
1 cucumber, cubed
2 roasted tomatoes, diced
2 c. chopped broccoli
1 6-oz can olives, halved
1 Carrot
1 Green pepper
½ c. vegetable oil
½ c. apple cider vinegar
1 tsp. garlic
2 tsp. basil
2 tsp. dill
1 tsp. salt
1 tsp. pepper

1) boil/prepare mac/pasta
2) cool pasta/add veggies
3) In a separate mixing bowl, I combined my vegetable oil, apple cider vinegar, garlic, basil, dill, salt and pepper.
4)mix all
5) Chill

Avocado Sandwiches: (this made about 16 pita half sandwiches)
6 mashed avocados
1 large tomato, diced
pita bread
fresh spinach

1) Mix the tomato into the avocado
2) Spread into half pita
3) Add spinach and mushrooms
4) Eat

Vanilla Fruit Salad: (to serve 6)
1 lg box of vanilla pudding mix premade with soy milk
a bunch of varies fruits
( I used kiwi, banana, blueberries, strawberries, grapes0
1-2 tbsp walnut pieces
1/4 tsp cinnamon

Pour vanilla pudding into dishes
Mix in fruit
top with walnuts and cinnamon

Flat Muffins: (makes 6)
This is technically a muffin recipe but I realized too late I didnt have a muffin tray, so I put them on a cookie sheet and made flat muffins and they were delicious apparently.

1 package instant oatmeal
1/4 cup flour
1 tsp baking powder
1/4 cup applesauce
2-3 ounces diet soda (I used diet coke)
6 tsp light brown sugar
6 "pinches" of sugar

Preheat oven to 375
Mix first 5 ing.
Spoon onto tray (or into muffin tray)
sprinkle with brown sugar (1 tsp each)
Bake 12-16 minutes
sprinkle with sugar
