Matzoh Brei - Recipe Request

Has anyone ever successfully veganized matzoh brei? If you're unfamiliar with it, it's basically broken up matzoh soaked a little in milk and then mixed with egg and either cooked in a big pancake or like scrambled eggs.

There are some vegan recipes out there, but they all seem a little weird to me.

Do you think I would need to buy an egg replacer for this? I've never used a store bought egg replacer, would it taste like eggs? I imagine something with nutritional yeast would be good here.

Any ideas would be great, thanks!
