Help on kosher rules?

I'm going to a brunch potluck tomorrow, where there will be at least one observant Jew. I have a message in to him to find out what rules he follows for Passover, but I need to start cooking--or at least preparing ingredients--soon. If I had to guess I'd say that he's Ashkenazi, and as I understand it, that means stricter rules. Could anyone in the know please tell me if I'm headed for trouble with my plan for an apple tart?

Crust: ground almonds and hazelnuts with a bit of sweetener (agave? maple syrup? golden syrup? turbinado sugar?) and a bit of coconut oil to hold it together. Possibly also a bit of meal made from kosher-for-Passover matzo if the mixture needs help coming together.

Filling: fresh apples, frozen sweet (but unsweetened) cherries, crystalized ginger (ingredients are just ginger and sugar).

I don't have kosher salt, but I could get some if need be. Is that necessary, though? I have "canning salt," which lists as its ingredients "only pure salt"--i.e., no iodine or anti-caking agents or anything. Would that be ok, or does it have to be labeled kosher?
