Roasted Veggies

I actually saw a recipe on a cooking show and have been playing with it ever since.  Last night, I took
1/2 of a baked sweet potato chopped up
1/2 of a red bell pepper
3 cloves of garlic
1/2 of an onion chunked
5 white mushrooms quartered
baby carrots
1/2 of a lime (or lemon) squeezed over
spray of olive oil
sprinkle of sea salt
cracked black pepper

I baked for about 40 minutes on 350, stirring every now and then. I tend to cook by smell.  When I can smell it throughout the house I check the tenderness of the veggies.

Tonight, I added some frozen cauliflower & broccolli and some jalapeno.  I think it will be even more delicious.
