Long time lurker, first time poster. I turned vegan almost three weeks ago and so far I admit it's a wonderful challenge for the cook in me.
My dish is called baked vegetables in tahini and I suppose you can have it with any other vegetable you feel like, which is not too watery or will not lose too many nutritional values in the oven.
1. Zucchinis, tomatoes, carrots and butternut squash of your chosen quantity.
2. One can/box of concentrated tahini(am not from the states so products you've got there are lost on me...).
3. One lemon.
4. Crushed/minced garlic - two spoonful.
7. Twice as much water as there is tahini.
How to prepare:
Cut the vegetables to slices: zucchinis to quarters along the length, tomatoes in half, squash in half and then into U-shaped slices and carrots in half along the length. Place in oven at maximum temperature for about 20 minutes.
During this time, prepare the tahini: take the garlic and place it in a mixing bowl. Squeeze the lemon and add salt and pepper according to personal taste. Add the tahini, then water, and mix until a thick but not sticky bright paste is created.
Take the vegetables out of the oven and douse them with the tahini until they're completely covered. Place back in the oven for 10-15 more minutes.
Take out of oven, cool, and enjoy!
