I just finished searching the tags and didn't find anything, so I thought I'd post and ask. Does anyone have a tried-and-true gluten-free yeast bread recipe? Just basic bread, nothing special. Two of my younger brothers were recently diagnosed as gluten-intolerant and my family, who is vegan like I am, is having a hard time finding a good substitute. There are some rice bread options at the grocery/health food store, but it's far too expensive for hungry teenage boys who desperately miss sandwiches or toast every morning.
Any good suggestions? I think my mom's attempts are turning out very gummy and not very bread-like at all. I tasted it and it almost reminded me of seitan, only rather bland. She does have access to a number of less common ingredients (like xanthan gum), so that shouldn't be a problem.
And if you aren't familiar with a specific recipe, I'd love to be pointed in the direction of some good gluten-free vegan blogs or recipe sites! :)
