cake / cupcake frosting questions

Hello. I have a question about Vegan Cupcakes Take Over The World. Specifically, the Vegan Fluffy Bttercream Frosting recipe. I can never seem to get frosting right, and would really like to do this to the letter.

The ingredients call for:

- 1/2 cup nonhydrogenated shortening
- 1/2 cup nonhydrogenated margarine (we use Earth Balance)

nonhydrogenated shortening: What brand nonhydrogenated shortening do you guys use? Is this something refrigerated in stick form, or nonrefrigerated in a can?

nonhydrogenated margarine: In the store, I see Earth Balance shortening, buttery sticks, and buttery spread - I've never seen Earth Balance margarine. What do you guys use for this?

Finally, I love strawberry frosting. How would you recommend making this recipe strawberry? I have tried just adding the juice of a real strawberry to frosting before, but that made the frosting too watery.
