Moroccan Couscous

It's been over 100 degrees everyday here in Orlando and I've been craving cold dishes like a mad woman.

This turned out to be a winner.

1 tsp cumin
1/2 tsp ground ginger
1/2 tsp ground cardamom
1/4 tsp ground cloves
1/4 tsp ground coriander
1/4 tsp allspice
1/8 tsp cayenne pepper
1 TBS olive oil
1 red onion, chopped
1 bell pepper, chopped
2 zucchinis, chopped
1/2 C raisins
1 tsp salt
1 can garbanzo beans, rinsed and drained
1 1/2 C vegetable broth
1/2 C orange juice
1 (10oz) box couscous
2 (8oz) cans mandarin orange segments (drain syrup)
2 TBS fresh parsley, chopped
3 TBS fresh mint, chopped

In a large saucepan, warm the spices over medium heat until fragrant. Add the oil, onion, zucchini, and pepper and saute for about 5 minutes.

Next add the broth, orange juice, raisins, salt, and garbanzos and bring to a boil. Once boiling, remove from heat and add the couscous. Let sit for 5 minutes then fold in the orange segments, parsley, and mint.

You can eat it warm but I prefer to chill it a few hours before serving cold :)
