Banana Bread with almost nothing in it
1/4 peanut butter
1/2 cup sugar
2 mashed banana
1 1/4 cup gluten free flour
1/2 tsp baking powder
1/2 tsp baking soda
Preheat oven to 350. Cream together the sugar and peanut butter. Add the mashed banana and water. Add flour, soda, and baking powder. Pour into oiled muffin pans or a glass loaf pan. I baked the muffins for 20 minutes and the bread for a little longer. The recipe made six small muffins with some batter left, so I put that in a bread pan.
It turned out OK, and most importantly Aiden liked it : ) But it was a bit crumbly, like lots of gluten free food.
