Finding the right kind of cheeze for potato skins...

I've been craving potato skins for a few months now.... The appetizer-type things that are deep fried and covered in cheese, green onions, and crumbled bacon. Mr. Jelin and I have a deep fryer that we got over a year ago as a wedding gift that hasn't yet been used and is calling my name...

Making it was bacon bits as a sub for the crumbled bacon shouldn't be hard, but I'm stumped on what I should use for cheeze. Something mild-tasting that will melt. I've only ever tried Follow Your Heart (yuck) and Tofutti slices so I'm kind of at a loss as to what I should use to make the *perfect* vegan potato skin. I have access to Whole Foods, Trader Joes, and would not think twice about placing an internet order to find the right stuff..... Any suggestions?
