mocha chocolate chip banana muffins

hi everyone, i am new to this community. i am a vegetarian transitioning to being a vegan. i made some muffins the other day (adapted the recipe from a regular recipe), and they turned out pretty good, so thought i would share! no pictures though, i am sorry! i tried to make it healthier too. the original recipe said this makes 18 servings, but my muffin pan must be big or something cos i only managed to make 12 muffins.

1 cup (vegan) margarine (i think i used vegetable oil spread)
2/3 cup brown sugar + 10ish packets of stevia from TJ's (in replacement of 1 1/4 cups white sugar)
1 egg - substituted with any egg replacement you want
3 ripe bananas
1 tbsp instant coffee granules in 1 tbsp water (i put more than 1 tbsp coffee as i wanted the mocha taste to be more obvious)
1 tsp vanilla extract
2 cups whole wheat flour (in replacement of 2 1/4 cups all-purpose flour)
1 tsp baking powder
1 tsp baking soda
1 cup vegan semisweet chocolate chips or chocolate squares

1. preheat oven to 350F
2. blend margarine, sugar, egg-substitute, bananas, dissolved coffee and vanilla in food processor (i did this manually and it turned out ok too)
3. add flour, baking powder and baking soda, blend until flour just disappears
4. add chocolate chips and mix in with wooden spoon
5. spoon into 15-18 paper-lined muffins cups (i made a dozen using those metal trays)
6. bake for 25 minutes and cool before serving/consumption!
