Black Bean Burgers

This is one of my favorite recipes from Students Go Vegan Cookbook by Carole Raymond.
Seriously. MAKE THESE. All my omni friends love these burgers. They're so tasty and easy to make!
I wanted to take pictures (both times I've made them), but we ate them too fast!
I've adjusted the recipe just a tad. Enjoy :)

(Makes about 3 medium sized burgers, though I like to make two huge burgers)

Ingredients:
1 15-oz can black beans
1/4 cup chopped onion (calls for red, but I use white)
1/4 cup finely chopped carrot
1 clove garlic, minced
1 tspn cumin
1 tspn chile powder
several tablespoons olive oil (will explain later)
1/2 cup rolled oats
1 tbspn ketchup
1 tbspn mustard
1 tbspn soy sauce

Instructions:
Drain and rinse the beans. Mash them in a medium/large bowl. I like to press them with a big spoon, and then use my fingers to get them thoroughly mashed. Set them aside.
Saute the onion and garlic in TWO TSPNS of olive oil (you'll use the rest of the oil later to cook the burgers). When the onion is soft and starting to brown, add the carrot, cumin and chile powder. Be sure to stir this a lot because the spices start to stick to the pan and will burn.
Add the veggie mix to the mashed beans and mix it well.
Now mix in the ketchup, mustard and soy sauce.
Finally, put the oats in and roll up 2 (or 3) bean burgers!
Cook each burger in your pan/skillet in about a tbspn of olive oil over medium heat. You'll probably only want to cook each side for about 3 minutes. Flip your burger and see how brown it is. You want a nice, medium color.

The burgers can easily fall apart, so just be careful when you're putting them on the pan, and taking them off, and when you're flipping them. If any chunks come off, just mold it back on!
