Pineapple & Asparagus Pasta Salad

This is a recipe I've veganised it's quick, easy and tasty :)

 
Ingredients

160g penna pasta
1/2 cup roasted cashews
1 bunch of asparagus
225g tin of pineapple pieces drained
2 shallots (green onions/scallions) chopped
1/2 red capsicum (pepper) diced

Dressing

2 tablespoons light soy sauce
1 teaspoon dark soy or regular soy sauce
1 teaspoon brown sugar
1 teaspoon grated ginger


Directions


1) Add pasta into boiling water and cook until tender
2) Mean while cook asparagus your preferred method (I use the microwave) until tender chop spears into thirds
3) In a small bowl mix dressing ingredients well ensuring sugar has dissolved
4) In a separate bowl combine drained pasta, pineapple, asparagus, cashews, shallots, capsicum & dressing. Toss well


Serve warm or cold


Note: As you can tell in the picture I used tin asparagus and peanuts, as I didnt have any on hand these substitutes work fine with the recipe. Feel free to tweak the recipe, I tend to add more ginger to the dressing :)
