Easy Smooth Root Vegetable & Lentil Soup
All measurements are approximate, because I never learn and write things down when I'm experimenting.
1 large or 2 small to medium russet potatoes (I suppose any kind will do, really)
1 medium onion
1 cup dry lentils
1/2 tsp dried basil
1/2 tsp dried marjoram
1/2 tsp dried thyme
1/2 to 1 tsp salt
1 quart (approx.) water
-Start water heating
-Rinse lentils, clean and dice vegetables (I left the skin on the potatoes)
-Add everything to water, bring to boil
-Reduce heat and simmer until vegetables are very tender
-Remove from heat and blend with an immersion blender, or in food processor/blender, until smooth
-Add salt/pepper to taste and enjoy!
Makes 6-8 servings, and is excellent reheated.
