The beans were really easy. I just sauteed some garlic in coconut oil, (my new cooking obsession!) and then threw in a can of red kidney beans. Once they heated up, I threw in a handful of roughly chopped cilantro, salt and pepper, a tiny bit of nutritional yeast, and a little cumin. I added water as needed, then just kinda smashed them with a spoon as they cooked. I let them simmer while I cooked the rest.
While making the beans, I put a little coconut oil in a pan and lightly pan fried some thawed tofu. I browned it on both sides, then sprinkled it with salt, pepper, cumin and chili powder on both sides. It got all crispy and was yummmm..
Then I threw some chopped chili peppers, red onion and green bell pepper in a pan and sauteed them til tender. When they were just about done, I threw a bunch of chopped kale in and steamed it until it turned bright green.
With the tofu in the warm pan, I sliced up a little cheddar teese cheese and covered it so it got all melty. I tossed some cilantro and green onions on the veggies and beans and it was soooo goood.
Anyway, I haven't posted in a while so I thought I'd share. I've never made smashed beans with that addition of cilantro before, and it really made a difference.
Anyway, that's that. It was super good.
