I decided to take photos of the meals that my husband and I typically eat during the week and post them on my personal journal, to answer the question I hear so often--"What can you eat?" I've been watching vegancooking for years and I hope that the members will take an interest, or at least enjoy the food-porn. While the meals I feature may not be particularly complex, I think there is value in discussing the "normal" and everyday vegan diet. By "normal" I mean meals we make often without using a recipe or list to shop. I will admit to you that Paul and I rely too heavily on processed foods, so our everyday diet is not perfect, but we try.Paul and I believe we have perfected our vegan pizzas. We use Whole Foods brand pre-made, whole wheat pizza crusts and Vegan Gourmet mozzarella cheese alternative. Paul puts olive oil and vegan parmesan on the crust before topping. We use an organic, canned pizza sauce. Once again, we use Gimme Lean sausage, but this time we fry it with fennel, before breaking it into smaller chunks and putting it on our pizzas. The fennel makes it interesting. We vary our toppings according to what we have left in the fridge. These pizzas have fresh spinach, sliced tomatoe, onion, minced garlic, green peppers, and broccoli. We also use black olives, walnuts, mushrooms, fresh basil and banana peppers, but did not have these items on hand last night. We bake the pizzas for about fifteen to twenty minutes on 425. Paul broils each pizza to melt the cheese beautifuly, in a final step.
We make a hell of a pie!
