The Veggie-hating Vegan

Afternoon, all!

Okay so I was a vegetarian + fish (so, pescatarian sort of?) for almost a year before deciding I wanted to be vegan. I wasn't able to do it cold-turkey as I had with vegetarian but I'm getting much better at it after a month of extreme self control and a few slips.

The problem is that I'm a disgustingly picky eater. I don't like salad, squash, asparagus, spinach, turnips, water chestnuts, legumes, potatoes, or anything else that I ought to, really.

So what do I eat? Well I snack a lot (crackers, pickles, fruits). And as for meals I really only eat tacos (crumbles, refried beans and seasoning) and spaghetti (with garlic and tomato sauce). I've made Tofu Scramble a few times. And cooked up some of the Morning Star chicken strips with spices and peppers to make a fajita-like dish.

It doesn't help that I live alone so anytime I cook, a lot of it ends up in the fridge, forgotten in a week or so.

I'm looking for recipes that are easy, not too focused on vegetables, and actually taste good.

I've tried the various Tofutti products and decided I can live without sour cream and cream cheese if those are my alternatives. Vegan cheese hasn't been any better.

If it helps, I do eat peppers, onions, broccoli, tomatoes, corn and carrots if they're cooked a certain way.
