Vegan Spaghetti Bolognase

Craving a new spaghetti recipe last night, I made this for dinner. It was really fast and really delish!! You can add whatever greens you like to the "mince". I used kale and zuchinni.. mmmm!

Ingredients
1 tbsp olive oil
1 red onion, chopped
1 large garlic clove, crushed
100g carrots (about 3), finely sliced
1 red pepper, deseeded and chopped
75g mushrooms, chopped
1 28oz can crushed tomatoes
2 Tbsp ketchup
1 tsp salt
kale
1 zuchinni
1/2 cup walnuts
Handful of fresh basil leaves
250g dried spaghetti


Method: How to make vegan bolognese

1. Put carrots, onion, kale, zuchinni, pepper, and walnuts in a blender, and blend until you've got a mince-like texture
2. Heat the oil in a large pan, add the garlic and fry for a few minutes to soften but not colour. Add the blended ingredients and cook for 5 minutes, adding the salt. Then add the crushed tomatoes, ketchup and basil leaves and bring to a boil. Then, stir into pasta and enjoy!!
