Cupcakes to Cakes?

Thanks everyone for helping me choose a gluten-free cake my Eddie party!

I've been looking online for recipes and keep finding things with expensive ingredients (I'm just a grad student!) and requiring a large food processor or mixer.

I was curious if the recipes in Vegan Cupcakes Take Over the World could be just made into a cake. They have 2 good recipes with not too many fancy ingredients.

I wasn't thinking anything fancy, just a spring form cake single layer size with the vegan cream cheese frosting.

Should I simply use the recipe as is, or double it? The recipe says it doesn't rise as much as other cupcakes, so I thought maybe I should double it to make one nice size single layer cake.

Sorry I'm clueless
