Veggie Soup

As I sat here snowed in, I had a craving for some soup. Emptied my veggie drawer of anything that might be on the verge of dying and got to making some veggie soup. Sweet and comforting...makes the snow not seem so bad. :)

Veggie Soup

6 stalks of celery
1 onion
1 rutabaga
2 medium carrots
2 parsnips
1 leek
2 TBS Shoyu/Soy sauce
1 1/2 tsp Ginger Powder
1 tsp Garlic Powder
Tempeh slices
1 tsp red miso paste

Fill a pot with water (I eye balled it to be honest...I'll say 10 cups of water, you can adjust this when you add the vegetables. Just make sure it covers vegetables) and bring to a boil. Add chopped rutabaga, carrots and parsnips then bring down heat to a simmer. Add onions and cook for 2-3 minutes before adding leek and tempeh. Add dill, parsley, and ginger and mix to evenly distribute. Add soy sauce/shoyu and garlic powder. Add salt and pepper to your liking and then let soup simmer until your root veggies are tender. Turn heat off and add red miso paste.

I served my soup with a few slices of avocado, which was delicious.
