Take 1 slip of Ritz crackers and roll them into fine crumbles with rolling pin. Add just enough Smart Balance (in lieu of butter) to hold it together. (a little less than 1/4 cup) Press into pie pan.
Mix 1 cup whole or 2% milk and one beaten egg together. Set aside.
Slice 2 big vidalia onions (or 3 medium ones) . Saute them in a little Smart Balance till nice and tender. Pat with paper towel to remove excess Smart Balance. Put them in the pie crust. Pour milk/egg mix over it. Top with shredded cheddar cheese. Bake at 350 for 30 or 35 minutes.
